My week past has been largely occupied with making applesauce. What a homely name for such a sublime substance! This one is sublime, and with nothing added. Just as it comes from the tree. Our nearby historical park boasts four old apple trees. Well, 30 years old. They were set out in keeping with the re-erection and preservation of the historic Carson Cabin, giving an idea of the plants that would have surrounded a homestead in the mid-19th C. Each tree is a different variety. Unfortunately, these are not specifically recorded.

My local fruit vendor, who is a native to these parts and knowledgeable about apples, told me that this variety is no doubt a YELLOW TRANSPARENT; my further reading supports this idea. He said that in the old days, people wanted to have at least one of these trees growing in the yard for their early and abundant fruit that was perfect for sauce and pie!

The trees are not currently cared for. Each year they produce differently. This year, the tree in question showed a bumper crop of a soft, green apples that are PERFECT for making sauce. I've made about 15 quarts so far, and don't know if I am finished yet. Tomorrow will tell.

LATER: Still going with the "saucing". To clarify, for those of you that think this may be hard work. . .
1) The apples are free and mostly collected from the ground or low-hanging limbs.
2) The trees are not sprayed, so the skins are not toxic and don't need careful washing, just a rubbing rinse in a bucket.
3) Much of the nutrition in an apple (I've read) is located just under the skin and around the seeds. Also, the pectin, which helps the cooked flesh thicken, is in the seeds. Thus, it is important to cook these components WITH the apple flesh.
4) I simply rinse them, slice them in half (they are rather small), and toss them in a 3L. stew pot.
5) I add about 3 c. water and bake in a hot oven for 45 minutes. See middle picture on the right.
6) Mash quickly with a potato masher--the whole mess is very soft.
7) Ladle into hand-cranked food mill about 3 c. at a time and turn crank. See bottom pic, at right. Takes less then a minute to run it through and the work is easy. You're collecting the goods in another pot. Two or three such loads per stew pot, yielding about 3 pints of sauce. ALL SEEDS, STEMS AND SKIN REMAIN in the food mill and there is precious little remaining--it's amazing how little. Add to the compost.
Then there is the canning process which I won't describe here, but it can be found in many places on the web or in a library book, if you are interested. Or freeze the sauce in pint or quart freezer bags.
This is just to explain that there is no "peeling, coring, and slicing" involved!! Much easier than making a pie from scratch, which I don't do often enough!

With Glaucoma and recent eye surgery my Grandma doesn't spend a lot of time baking any more...so this year my daughter and I made she and my Grandfather a batch of her amazing recipe and sent them by Overnight Delivery. I just wish I could be there to see the smile on their faces when they open the box tomorrow. And wish even more that we could all sit around the table Christmas Eve like we used to...laughing, talking, and enjoying those Cranberry Orange "Muffies."

Wine Cellar

The often common mentioned words, Wine Cellar refers to a storage area for wines, as well as the wines stored there.

Traditionally, a wine cellar was underground because such a location keeps the wines at the proper temperature. But these aren't practical in the cities we stay today.

Subterranean cellars certainly aren't a requirement today with the advent of temperature-controlled units that can be placed anywhere. Ideally, a wine cellar should be dry (but not overly, since a modicum of moisture helps keep the corks from drying out), well ventilated, vibration free, and cool. The ideal temperature is 10° to 15°C, but a reasonably consistent temperature between 12° and 15°C is acceptable.

What's important is that the temperature remain constant-if it changes, the change shouldn't be drastic. Although wines age faster in warmer temperatures like in your storeroom, they shouldn't be damaged unless the temperature is excessively hot.

Bottles should be stored on their sides so that the wine is in contact with the cork to keep it moist and airtight. A cork that shrinks can expose the wine to oxygen (see Oxidized), which can ruin a wine and your mood when discovered years down the road.

FRIDAY!!! Awesome, I survived the week, it was a long one, especially after the holiday break, I worked two days the week of Christmas and three days the week of New Years Eve, so five days in a row felt more like 2 weeks.

I had gone almost all day with no good shots, so around 10:45pm I though that an HDR of my kind of empty fridge would look cool. As you can see, we keep mostly condiments and produce in the fridge, there is fruit in the bottom drawers too.

Ray left the table and grabbed two beers from the refrigerator. Ray been in homicide for just a year. He started out as a beat cop out of the academy. Then a quick rise into narcotics before some timely retirements brought him into homicide. Long days, lots of paper pushing, suit and ties in the Sacramento summer.

"Well, it's a good thing that today's your day off and you didn't get it," Ray said as he returned to the living room.
"I know. Jumpers are a mess to deal with. And I already consider myself desensitized. Full?"
"Yeah. Stuffed."
"Good, let's get out for some desert later."

Ray changed into a t-shirt and some jeans. They walked down to Vic's Ice Cream just before ten, just before closing. "How about a we have a taste at the bar instead," Ray said.
"You really know how to please a girl. I'll pass. Dessert remember?"
"I wasn't serious. Whatever you want."
"Glad you know. You are living in my apartment after all."
"Yeah I know. Don't need to remind me."

They had a seat by the window. It was empty considering the time and Ray liked it that way. He liked it when things were quiet. He looked at Doris. She was beautiful he thought, not in the typical sense. But in the way that he would've noticed her ten out of ten times wherever he saw her even among a sea of them.

"How are you feeling?" Ray said.
Doris arched her right eyebrow and peered over her glasses, "Good..."
"I mean about --"
"Still getting morning sickness and cravings. So you're ready to talk about it now?"
"I guess. I've been doing some thinking and I'm ready for it."
"You should. Considering it's both you and mine. It's time to grow up Ray. I've been dealing with it on my own. But --"
"I know."
He reached across the table and held her hand, "I know Doris. I want to do right by you. But, I'm not sure if I know how. I mean this job, this world..."
"I know Ray. I know."
