My week past has been largely occupied with making applesauce. What a homely name for such a sublime substance! This one is sublime, and with nothing added. Just as it comes from the tree. Our nearby historical park boasts four old apple trees. Well, 30 years old. They were set out in keeping with the re-erection and preservation of the historic Carson Cabin, giving an idea of the plants that would have surrounded a homestead in the mid-19th C. Each tree is a different variety. Unfortunately, these are not specifically recorded.

My local fruit vendor, who is a native to these parts and knowledgeable about apples, told me that this variety is no doubt a YELLOW TRANSPARENT; my further reading supports this idea. He said that in the old days, people wanted to have at least one of these trees growing in the yard for their early and abundant fruit that was perfect for sauce and pie!

The trees are not currently cared for. Each year they produce differently. This year, the tree in question showed a bumper crop of a soft, green apples that are PERFECT for making sauce. I've made about 15 quarts so far, and don't know if I am finished yet. Tomorrow will tell.

LATER: Still going with the "saucing". To clarify, for those of you that think this may be hard work. . .
1) The apples are free and mostly collected from the ground or low-hanging limbs.
2) The trees are not sprayed, so the skins are not toxic and don't need careful washing, just a rubbing rinse in a bucket.
3) Much of the nutrition in an apple (I've read) is located just under the skin and around the seeds. Also, the pectin, which helps the cooked flesh thicken, is in the seeds. Thus, it is important to cook these components WITH the apple flesh.
4) I simply rinse them, slice them in half (they are rather small), and toss them in a 3L. stew pot.
5) I add about 3 c. water and bake in a hot oven for 45 minutes. See middle picture on the right.
6) Mash quickly with a potato masher--the whole mess is very soft.
7) Ladle into hand-cranked food mill about 3 c. at a time and turn crank. See bottom pic, at right. Takes less then a minute to run it through and the work is easy. You're collecting the goods in another pot. Two or three such loads per stew pot, yielding about 3 pints of sauce. ALL SEEDS, STEMS AND SKIN REMAIN in the food mill and there is precious little remaining--it's amazing how little. Add to the compost.
Then there is the canning process which I won't describe here, but it can be found in many places on the web or in a library book, if you are interested. Or freeze the sauce in pint or quart freezer bags.
This is just to explain that there is no "peeling, coring, and slicing" involved!! Much easier than making a pie from scratch, which I don't do often enough!

Every Christmas since before I was born my Grandmother has baked her "famous" Cranberry Orange "Muffies". It is something we've all looked forward to every year. With Glaucoma and recent eye surgery my Grandma doesn't spend a lot of time baking any more...so this year my daughter and I made she and my Grandfather a batch of her amazing recipe and sent them by Overnight Delivery. I just wish I could be there to see the smile on their faces when they open the box tomorrow. And wish even more that we could all sit around the table Christmas Eve like we used to...laughing, talking, and enjoying those Cranberry Orange "Muffies."
